This super moist lemon cake needs no frosting, but a squirt of whipping cream adds a bit of sweetness to offset the lovely tartness of the four lemon flavors. This cake accepts any frosting that compliments the citrus flavors OR serve it all by itself with hot tea or after-dinner coffee. This simple yet elegant sweet ending was very popular during “High Tea” served at Cozy Cafe. It is light and refreshing, leaving a pleasant citrus note on the palate.
Preheat oven to 350 degrees
In large mixing bowl, combine:
1 boxed lemon cake mix.
1 small package instant lemon pudding & pie filling mix.
2 Tablespoons lemon juice.
1/2 cup salad oil.
1 twelve ounce can lemon-lime soda.
Stir or mix until smooth and most of the lumps are gone.
Oil bottom and sides of two 8″ baking pans.
Pour batter equally into two 8″ round cake pans
Place pans on larger baking sheet (to insure bottoms don’t over brown).
Place in middle rack for 30-34 minutes or until a light tap in the center bounces back and toothpick comes out clean.
Allow to fully cool before removing cakes. Invert cake pans onto suitable plate, tap sides and bottom lightly to loosen. If serving right away, invert again onto another plate so the beautiful golden top is exposed to your guests.
Serve as a round sheet cake or frost between layers and stack a double lemon cake. Bake two batches and you can create a towering and surpisingly stable three or four layer masterpiece. But don’t make your between layers too thick. It doesn’t take much frosting to hold them together.
If your budget allows, try spreading a thin layer of bottled or home made lemon curd or more instant lemon pudding (instead of frosting or whipped cream) between the layers for a fifth lemon experience.
No time for fancy desserts? Cool Whip or can be spread over top and sides OR just spray canned whipped topping on individual slices.
For morning coffee cake, stir 1/4 cup poppy seeds into batter before portioning into pans.
