Doesn’t this look good? And it couldn’t be easier. Not only does this breakfast sandwich look better than anything you can buy in town, it tastes better — and it’s a lot cheaper!
This tastes so good you will want to serve this on special holidays.
The tin of ham patties comes with six, so adjust your other ingredients to match that number or cook in batches if you don’t have enough egg rings.
On a large flat griddle over medium-low heat, spray the surface of the griddle and the inside of the egg rings with cooking spray. I do them in batches of three so I have room for three ham patties and three egg rings.
It is important to get your egg rings and the griddle up to temperature, as the whipped eggs will begin to set right away in hot rings. Cold rings will allow the egg to seep under the rings, making for a less than professional plate presentation. After all, aren’t you going through all this to show off?
Whip the eggs well and divide them evenly into the egg rings. Medium or large eggs work best. Anything bigger overflows the egg rings and makes a mess.
Place your three patties on the griddle and begin warming them on one side. When they are lightly browned, turn them over and brown the other side.
Now it’s time to warm your split English Muffins and get them warming either in the toaster, toaster oven or the microwave. All that is needed is to get them warm and soft.
By now the eggs are beginning to set. When the sides are set, give the egg ring a jiggle or a tap to loosen the edges of the egg and lift the ring off the egg. If it’s still runny, leave the rings in place a bit longer.
When the eggs are set enough to turn over, remove the rings, turn the eggs and place the cheese slice on top of each egg (now lightly browned).
As soon as the muffin halves are warm and the cheese is melting, assemble your beautiful breakfast treats beginning with the egg on one muffin half, then the cheese and the hot ham patty. Place the top muffin half and serve right away with that cup of coffee, hot chocolate or spiced warm cider.
