With a few simple ingredients and an assortment of leftover bread, you can enjoy a warm, comforting bread pudding tonight.
Whisk together three eggs, a half cup sugar (or more to taste) and a large can of sliced peaches (29 ounces) and stale, leftover bread. It’s all you need to create a wonderful and simply satisfying dessert. Top it with a dollop of sweetened whipped cream or a scoop of vanilla ice cream. serves about 4.
Twelve slices of assorted bread soaked in the egg/peach mixture, along with a few chunks of butter or margarine is about it. Let the bread soak for a half hour, stirring once or twice to insure all the pieces are wet.
Place in suitable ovenware and bake at 325 degrees (uncovered) for about an hour or until a knife inserted into the center comes out clean.
Allow the pudding to rest and cool for about an hour. Serve warm and enjoy this most humble dessert. It will stay moist under refrigeration for a day or two.
