Three simple ingredients create a rich, silky banana pudding your guests will rave over.
Slice one large ripe banana (has brown spots) into 1/4″ rounds and divided equally into four 8 ounce ramekins (small bowls). In a medium mixing bowl, whisk together the pint (2 cups) cold Half & Half along with the packaged instant banana pudding mix. Pour immediately into ramekins, covering the banana slices completely, stirring to make sure they are covered.
Cover with plastic wrap and refrigerate for an hour or so. When ready to serve, spray the tops of each one with a little whipped cream or kool whip’
The half cream, half milk combination offers a smooth richness plain 2% milk just doesn’t do. Heavy cream, in my opinion is too much, too rich.
Add a drop or two of bottled banana flavoring if desired for a more intense banana flavor.
For pie filling, you may need a double batch but you will need to reduce the amount milk or 1/2 & 1/2 as package directs. For a truly high and impressive pie, use two packages and two bananas but cut down on the milk by about 25%. Allow the pudding to set up more firmly and push the sides up higher in the middle to form a dome shape. Cover all with sweetened whipped cream.
