This colorful Italian-style dinner couldn’t be easier. I used a small rectangular porcelain mold large enough for two, but your mixed meat can be as large or as small as you choose.
Using your favorite meatloaf recipe or follow mine, simply fill your baking dish halfway, then push one or two lengths of mozarella cheese sticks into the bottom half. Press the top half down to seal in the cheese and bake until internal meat temperature reaches 155-160 degrees.
In the meantime, open a can of Italian green beans and dump the juice and all into a saucepan. Add a little granulated garlic, a couple tablespoons of chopped onion and a tablespoon of bottled ham base (Costco). As for the potatoes au gratin, use a boxed mix and follow the stovetop directions.
Nothing could be easier and quicker.
2 Pounds ground chuck
2 Large eggs
2 Cups dried bread crumbs or crushed crackers of choice
1 Cup milk
1/4 Cup catsup
2 Tablespoons Worcestershire sauce
2 Teaspoons granulated beef bullion
2 Teaspoons granulated or powdered garlic
2 Teaspoons granulated or powdered onion
Salt & pepper to taste
-Preheat oven to 350 degrees.
-In large mixing bowl combine crumbs, eggs, milk and catsup.
-Add remaining ingredients, mixing well by hand, NOT in a power mixer. Over mixing will toughen the dish. -Coat a loaf pan or elevated insert pan with cooking spray.
-Form meat into loaf shape suitable for the baking dish. o Pack tightly into pan, allowing “” open space at top, below the rim.
-Bake uncovered for approximately 1 hour or until an instant-read thermometer reads 155-160 degrees in the center.
-Allow the loaf to rest 10 minutes before carving.
-Substitute 1 lb ground pork for half the beef.
-Add minced onion or bell peppers to meat mixture. o Substitute cracker crumbs for bread crumbs.
-Substitute crushed tortilla chips for crumbs.
-Substitute chili sauce or BBQ sauce for catsup.
-Substitute salsa for catsup.
-Substitute A-1 Steak sauce for Worcestershire.
-Add up to 1 cup shredded cheese to meat mixture. o Add sliced onions to top of loaf before baking.
