At Cozy Cafe, we prided ourselves on our house-made salad dressings. Fresh is always better than bottled, and that concept was another reason our restaurant was critically-acclaimed,receiving the best food review the Bellingham Herald had ever given a full-service family-owned restaurant.
You can easily make this delicious salad dressing with a few common ingredients and a blender. Nothing could be simpler and you will taste the difference between fresh and bottled with the very first bite.
In a blender combine:
3/4 cup olive oil
1/3 cup red wine vinegar
4 large peeled garlic cloves. See: How to peel garlic
1 tablespoon Italian herb blend
1 teaspoon salt
1-1/2 teaspoon sugar
1/2 teaspoon pepper
Blend until creamy. Serve over assorted greens.
Store in sealed container in refrigerator.
Bring to room temperature and shake before using.
