This simple salad goes especially well with rich dishes like thick chowders, cream-based pastas, cheesy casseroles and hearty stews.
With only three ingredients marinated in a delightful mixture of bottled Spicy Ranch dressing and red wine vinegar, nothing could be easier.
1 15 ounce can red kidney beans , drained and rinsed.
1 8 ounce can whole kernel corn, drained and rinsed.
1/3 cup Spicy Ranch salad dressing.
2 tablespoons red wine vinegar.
1 teaspoon sugar.
1 medium cucumber, peeled, cubed.
In a medium bowl, whisk together the salad dressing, vinegar and sugar.
Add the drained beans and corn, stirring to coat. Cover and refrigerate.
Just before service, add cucumber pieces. Stir to coat and serve immediately.
