No time for scratch baking? Never fear, the cake mix is here.
4 ounces butter, melted
1/3 cup peach jam or preserves (or apricot)
1 boxed yellow cake mix
*Preheat oven to 350 degrees.
*Cream together the butter, egg and jam.
*Stir in cake mix with a stout spoon. Batter will be thick.
*Let stand a few minutes. The dough will thicken slightly.
*Line baking sheet with baker’s parchment or silicone sheet.
*Scoop 1″ balls (about 30) onto baking sheet, spacing them 1″ apart.
*Flatten dough balls slightly with cup or glass bottom.
*Sprinkle with sugar crystals.
*Bake at 350 degrees for 13-14 minutes.
*Cool before removing. Package as you wish.
