This delightful salad dressing is light and bright–a perfect compliment to any hearty winter main course.

For the dressing:
2 Tablespoons olive oil
1 Tablespoon orange juice concentrate (not thinned)
2 Tablespoons balsamic vinegar
1-1/2 Tablespoons honey
Half the zest from one large orange
Salt & Pepper to taste.
Whisk vigorously and add to salad greens just before serving.
For a really impressive salad presentation, slice a few grape tomatoes in half and add a well-drained can of Mandarin orange segments to your tossed greens and tomatoes. Scatter a few sliced almonds on top of each portion and your guests will rave over your culinary skills. Place the remaining orange zest over the salad and serve immediately.
