Pancakes can be something special.
Years ago, cornmeal and its variations in baking were offered in every kitchen but it took a bit of effort to get the scratch ingredients just right.
These days, when easy-to-use package mixes are readily available, it takes but a few minutes to whip together something memorable. Here is a simple recipe for three people.
Easy Cornmeal Pancakes:
1 cup packaged pancake mix (such as Krusteaz)
3/4 cup cornbread (corn muffin) mix
1/4 cup brown sugar
1 egg, slightly beaten
1 tablespoon cooking oil (optional)
1-1/4 cups evaporated milk or milk.
Mix together with a wooden or plastic spoon. No need for electric beaters.
Ladle over a medium-heat griddle until golden brown. Turn over and repeat.
Serve with softened butter and maple-flavored syrup.
Variations: warm your favorite, jam, jelly or preserves instead of syrup and pour over these delicious pancakes.
