French toast, with it’s rich eggy taste is a family favorite–especially on lazy mornings or special occasions. Here is a simple, easy to make recipe using common ingredients and day old French bread (or any sliced bread).
1 medium ripe banana, well mashed
1/3 cup instant banana pudding (about half the package)
2 large eggs
1 to 1-1/2 cup milk (or half & half)
12-14 slices french bread cut about 3/4″ to 1″ thick
1 tablespoon dark rum or rum flavoring (optional)
Mix all ingredients together. It will thicken slightly and become creamy.
Dip each slice briefly (2 seconds), turn over and repeat other side.
Place each wet slice on a well oiled griddle set over medium-low heat.
When the first side is golden brown, flip and repeat. Depending on the temperature of your griddle, the browning process might take several minutes, so don’t be in a hurry.
Serve with butter and maple syrup. Or try other syrup flavors–I also like drizzled caramel sauce instead of maple.
The banana flavor is subtle and the end result is not cloyingly sweet. Enjoy.
