A simple can of cooked ham, two split English muffins, a couple tablespoons of mayonnaise and a dollop of Dijon mustard topped with four cheese slices makes a pretty good meal–and it’s super simple using one large fry pan or griddle.
Split two English muffins. Lightly butter cut side. Place face down on a medium-low griddle or large pan. Brown the underside.
Meanwhile, empty contents of can into medium bowl. Add two tablespoons mayonnaise and 1 teaspoon Dijon mustard. Stir together until well mixed.
Turn muffins over and distribute the ham filling evenly over the four halves.
Place on same pan or griddle filling side up. Cover tightly and continue to warm for 5-6 minutes or until the ham is warm to the touch.
Top each muffin with a slice of Provalone, Mozzarella, Swiss or American cheese.
Cover again and continue cooking until cheese is melted and begins to run onto the pan.
Serve with potato salad or macaroni salad and fresh cut watermelon. Great as a breakfast, a brunch or a casual evening meal. Super quick and easy, even at a remote camp site.
