Preheat oven to 350 degrees
Spray interior of jumbo muffin pans with non-stick spray
Mix yellow cake batter as directed on package but delete water and replace with the juice from the canned peaches.
Into bottom of EACH muffin space:
1 Tablespoon brown sugar
1/4 teaspoon ground cinnamon
1 Tablespoon butter
1 canned peach half, cut side up (reserve juice)
1 maraschino cherry (stem removed)
Scant 1/2 cup yellow cake mix
Bake uncovered on center rack for 25-30 minutes.
Allow to cool slightly.
Run a thin knife around the edges to loosen each dessert.
Turn out onto cookie sheet, tapping the muffin mold to release individual desserts.
Transfer individual desserts onto saucers, bowls or ramekins for service.
NOTE: These make wonderful desserts for birthday parties–simply place a candle in the center for the birthday child (or one candle for every kid in the room).
